Meat Cooking Temperatures

Internal Temperatures

  • Steaks & Roasts
    Rare 125–130°F
    Medium rare 130–140°F
    Medium 140–150°F
    Medium well 150–155°F
    Well done >160°F -170°F
  • Ground Beef - 160 °F
  • Fish - 145 °F (will flake easily when pressed with a fork)
  • Pork - 160 °F
  • Egg Dishes - 160 °F
  • Chicken - 165 °F (bone in takes up to 2x as long to cook)
  • Turkey 165
  • Lamb
    Rare 135
    Med-rare 140-150
    Med 160
    Well 165
